While running a bakery in the Cayman Islands, pastry chef Tamera Clark met Ryan Bloom, a real estate developer and fellow Canadian. The two hit it off, and soon they were talking business. Both felt that while there was no shortage of bakeries, something was missing. Soon they were exchanging ideas and envisioning the possibility of starting a sweet shop like no other. For a locale, the duo settled on Montreal, where they partnered with Ryan’s sister-in-law, Jacqueline Berman.
In February 2013, Rustique Pie Kitchen opened its doors on Notre Dame Street in the city's St. Henri neighbourhood. The quaint and cozy old-fashioned bakery and pie shop would soon become one of Montreal’s most talked-about sweet spots.
