It’s a story about a boy who fell in love...with making sushi. Hilary Nguy enjoyed his early career, mostly working jobs as a line cook at Western-style restaurants. In 1997 he had the opportunity to do an apprentice at an East Side Japanese restaurant. The problem was, he knew nothing about sushi. Hilary reminisces, “It was tough at first, but then I fell in love with it. Making sushi became a passion. I loved being in the front and presenting a show to the patrons.”
So he learned all about the art of sushi. In 2003, when his family wanted to start a small business, Temaki Sushi was born. Today, owners Hilary and older sister Angie employ 19 people, many of whom are family members.
Originally founded a take-out spot, Temaki Sushi was rebuilt in 2007 and now sports a spacious, clean and elegant interior. The restaurant's success is a result of the team's unwavering commitment to consistency, and to building relationships with their patrons. Hilary estimates that about 95 per cent of their clientele are regulars. They don’t advertise, business is all word of mouth, and loyal clients have become friends of the restaurant staff.
