Try these superfood ginger salmon kebabs

Here's what you'll need

This recipe takes 10 minutes to prepare, 30 to marinade, and about 5 to cook. It serves 4. Here's what you'll need:

  • 500 g (1 lb) Skinless salmon fillets
  • 2 Yellow peppers
  • 30 ml (2 tbsp) Olive oil
  • 15 g (3 tsp) Fresh ginger, grated
  • 2 Garlic cloves, crushed
  • 1 Green chili, finely chopped (optional)
  • Juice of 1/2 lemon
  • 30 g (2 tbsp) Cilanto, chopped

Put it all together!

  1. Preheat the broiler to high. Cut salmon fillets into bite-sized cubes and put them in a shallow non-metallic dish. Cut yellow peppers into squares and add them to the dish.
  2. In a bowl, combine the olive oil, finely grated fresh ginger, crushed garlic cloves, finely chopped green chili (optional), and the juice of half a lemon. Gradually spoon the marinade over the salmon and pepper, then turn to coat. Cover and marinate for 30 minutes.
  3. Thread the marinated salmon and pepper pieces alternately onto four skewers. Broil the kebabs for about three minutes and then turn, brush with the remaining marinade, and broil for another two minutes. Garnish with chopped fresh cilantro and serve.
