Recipe: Gnocchi with Chives and Ricotta Cheese

Impress your guests with this simple recipe of original gnocchi made with two kinds of cheese, ricotta and parmesan cheese, and chives.

Recipe: Gnocchi with Chives and Ricotta Cheese

Servings: 6 people

  • 750 g (26.5 oz) fresh ricotta cheese
  • 185 g (¾ cup) grated parmesan cheese
  • 2 small eggs
  • 115 g (¾ cup) flour
  • 60 g (1 cup) chopped fresh chives
  • 15 ml (1 tbsp.) melted butter
  • 250ml (1 cup) cream
  • 100 g (3.5 oz) crumbled bleu cheese
  • 6 slices prosciutto cut into thin strips (about 60 g or 2 oz)
  • 45g (3 tbsp.) chopped fresh chives

Instructions

  1. Preheat the oven to 180 °C (350 °F). Put the ricotta, Parmesan, eggs, flour and chives in a large bowl and season to taste. Mix with a wooden spoon.
  2. Bring the water to a boil and lower the temperature to a simmer.
  3. With two dessert spoons, shape oval dough balls and then immediately place them into the water. Cook four to five minutes or until the gnocchi rise to the surface.
  4. Take them out of the water and place them on paper towels. Proceed in stages so that the pan is not too full.
  5. Grease a baking dish with a little melted butter and put in some gnocchi.
  6. Mix the cream, bleu cheese and ham.
  7. Pour over the gnocchi and cook for 10 to 12 minutes in the oven until lightly browned.
  8. Add the chives.
  9. Serve hot with a green salad.

Note: You may also top the gnocchi with a bleu cheese sauce or a creamy fontina sauce.  You can also top with basil leaves and fresh sage; the herbs will add a fresh and surprising taste.
