Savoury sauce recipe: turkey mole

Derived from the word molli (concoction), this spicy Mexican sauce is a rich blend of onions, garlic and chili peppers. The signature dark taste and colour come from chocolate, which adds sweetness and a bitter edge that balances the other flavours.

Serves 4

  • 10 ml (2 tsp) canola oil
  • 2 large onions, chopped
  • 2 large garlic cloves, minced
  • 22 ml (1 1/2 tbsp) chili powder
  • 15 ml (1 tbsp) sesame seeds
  • 1 small red chili pepper, seeded, deveined and minced (wear gloves when handling)
  • 500 g (1 lb) skinless, boneless turkey breast fillets, cut into 2.5-cm-wide (1-in-wide) strips
  • 2 ml (1/2 tsp) salt
  • 1 can (397 g/14 oz) whole tomatoes (with juice)
  • 250 ml (1 c) raisins
  • 2 ml (1/2 tsp) ground cloves
  • 250 ml (1 c) low-fat, reduced-sodium chicken broth
  • 45 ml (3 tbsp) chopped bittersweet chocolate
  • 50 ml (1/4 c) toasted sliced almonds
  • 30 ml (2 tbsp) chopped fresh cilantro
  • Sprigs of fresh cilantro
  1. Heat the oil in a large nonstick skillet over medium-high heat. Add the onions, garlic, chili powder, sesame seeds and chili pepper. Sauté until the onions are soft and the sesame seeds are fragrant and toasted, about 10 minutes.
  2. Sprinkle the strips of turkey with the salt. Add the turkey to the skillet and toss with the onion mixture. Stir in the tomatoes (with juice) and raisins. Sprinkle in the cloves.
  3. Pour in the broth and bring to a full boil. Reduce the heat to medium-low, cover the skillet and simmer gently until the turkey is no longer pink, about 10 minutes.
  4. Add the chocolate, almonds and chopped cilantro, and stir until the chocolate has melted. Spoon into a serving dish and decorate with sprigs of cilantro.

Personalize it!

  • Serve this as a taco dinner. Just extend and firm up the sauce.
  • Dissolve 10 millilitres (two teaspoons) cornstarch and 50 millilitres (1/4 cup) cold water in a measuring cup and whisk the mixture into the pan after the turkey is cooked but before adding the chocolate.
  • Bring to a boil and cook until the sauce thickens, about two minutes.
  • Then serve as a filling for tacos, along with lettuce, tomatoes, onions, avocado and cheese.
