A simple recipe for mojito-grilled scallops

These scallops are marinated in a bona fide mojito cocktail. While the combination might throw you off a bit, these two delicious things come together to make an amazing dish.

A simple recipe for mojito-grilled scallops

If you'd like some extra mojito for sipping, double the mojito recipe (which makes about 250 millilitres/one cup) but leave out the salt and pepper. Serve the cocktail over crushed ice. Limit the amount of marinating time to 20 minutes, or the acid in the cocktail will actually start to cook the seafood, and the cooked result will be tough.

Mojito Ingredients:

  • 50 g (1/4 c) plus 5 g (1 tbsp) chopped fresh mint
  • 30 ml (2 tbsp) sugar
  • 30 ml (2 tbsp) water
  • 125 ml (1/2 c) light rum
  • Juice of 2 limes
  • 4 dashes Angostura bitters
  • 5 ml (1 tsp) salt
  • 2 ml (1/2 tsp) ground black pepper

Scallops Ingredients:

  • 450 g (1 3/4 c) sea scallops
  • 15 ml (1 tbsp) olive oil
  • 5 ml (1 tbsp) unsalted butter

Method:

  1. For the mojito: Muddle (gently mash together) 50 g (1/4 cup) of the mint and the sugar in a bowl or cocktail shaker. Stir in the water until the sugar dissolves. Stir in the rum, lime juice, bitters, salt and pepper. Pour into a ziplock bag.
  2. For the scallops: Drop the scallops into the marinade bag, press out the air, seal and refrigerate for no longer than 20 minutes. Heat a grill for medium-high heat.
  3. Remove the scallops from the marinade and pour the marinade into a pot. Coat the scallops all over with the oil and let stand for 10 minutes.
  4. Boil the marinade over high heat until reduced to about 75 millilitres (1/3 cup), four to five minutes. Remove from the heat and stir in the butter until melted. Keep warm.
  5. Grill the scallops directly on the grill grate until browned and springy to the touch but still a little soft in the centre, about three minutes per side.
  6. Divide the sauce among the bottoms of four small plates. Arrange the scallops over the sauce and scatter on the remaining five grams (one tablespoon) mint.
