Meats, and more specifically, sausages, are seeing a resurgence in popularity in Quebec right now and it's not by chance. One of the more colourful entrepreneurs of the microcosm of Quebec food service, Felipe St-Laurent opened Ils en Fument du Bon, an upscale delicatessen that has transformed the sausage into the new "drug" for foodies.
Nicknamed the 'sausage pimp', Felipe approaches meats by testing the limits with both the content and the packaging. His sausages stand out first for their abundant, original, and sometimes wild seasonings: bacon and cheese curds, smoked meat, blue cheese and port wine, etc.
Being like everyone else is not a concept that agrees with Felipe. Instead, he prefers to have a unique signature that includes serving the food on tennis racquets, alpine skis and old baseball bats — which just proves that there is always a way to reinvent anything.
