Founded in 2012, Burrito Shop has roots going back far further. It was started by Jacomo Del Rosario and his father with the intention of showing off authentic Mexican cuisine in an accessible form, adapted from the recipes of Jacomo’s own grandmother. “I went down before we opened this place and several times since to make sure that I got the recipes right, while adapting it to the volume of customers we serve without leaving authenticity behind.”
One way in which that authenticity is assured is the principle that all the meat and produce is locally sourced, delivered that day, and nothing is stored overnight. “If it’s late at night and we don’t have chicken left, that’s the price we pay for making sure that it’s fresh-prepared daily. Our customers understand that and appreciate the principle, so that sometimes a choice may be restricted, but the quality of food is never compromised.“
Staying true to its Mexican roots, Burrito Shop will be serving roasted pork tacos and tortas, called Puerco Asado, for the event. Be sure to save some room!
